Maple syrup is a completely natural product with no additives. Many health conscious people are switching away from processed sugars and using maple syrup as a natural and nutritious sweetener. Maple Syrup is high in manganese, riboflavin and zinc. Maple syrup can be used as a substitute for processed sugar for all aspects of cooking and baking.
Maple syrup is made from the sap of maple trees in late winter and early spring. The process starts with tapping of the maple trees to collect the sap. Once collected the sap is boiled down to make maple syrup. The sap comes out of the trees with approx 2% sugar content. The sap is boiled down until it reaches approx 67% sugar content. Ontario and Quebec are the largest producers of maple syrup in Canada.
